1. Heat the groundnut oil in a wok and add the sugar, fish sauce and oyster sauce while stirring.
  2. Reduce to a syrupy sauce.
  3. Fry the onion, garlic and red pepper briefly. Then add the chicken.
  4. Wait until the chicken is cooked.
  5. At the end add the cashew nuts, spring onion and sugarsnaps.

Serve directly with white rice.
